The main webpage https://emutos.sourceforge.io/download.html takes me to a download "emutos-512k-1.4.zip" that has ROM files which its readme.txt file says are only compatible with Atari TT, Falcon and emulators of those. From the webpage https://sourceforge.net/projects/emutos ... mutos/1.4/ which download should I choose that will have .rom files I can split into two hi and lo files. Which in turn I can write to 128KB AMD AM27C010 dip 32 eeproms.

You want emutos-256k-1.4.zip

STE only supports 256K ROMs. Split into high and low bytes, that's your 128K (1Mbit eproms)

256 KB in the language of your choice. If you want a more customised experience, you can also use Thorsten Otto's (RIP) online tool to generate an EmuTOS image with specific features.

If you don't want to solder the jumpers to select 27C010 EPROM then use 27C1000 as they are the same setting as the original mask ROM.

You could also use the OneROM

They are very inexpensive and very flexible offering different ROM options and being programmable via USB.

One thing I do always do with STE's is replace the links (They are just zero ohm resistors) with jumper blocks, but that's entirely your choice and does depend on your soldering skills. You don't want to damage the STE so if you don't have the skills then don't do it.
