I'm a bit confused to the fact some flash chips have boot blocks and some don't. There doesn't seem to be any info to it all.

I'm assuming the boot blocks just have additional protection in its bootblock ranges ? And they work no different from the rest of the flash and need no special handling or anything and I can just ignore it all ?

It depends on the device...some have smaller sector sizes for the boot blocks than the rest of the device as well.
They also often come in top or bottom boot block versions to suit the different boot modes for the processors.

Erasing I think is done on 2K blocks, so smallest being 4K on boot should cause any issues there AFAIK.

This affects only the programming algorithm. When reading they all behave like regular ROMs.
