You probably need to measure the frequency of the noise and work out what value cap would act as a filter for that frequency.

@rubber_jonnie I may have a spare genuine PSU, but can't remember if it's for my GC or N64 and if it really is spare if you know what I mean

So don't go out looking for a genuine one just yet.
