When I create a drum track with various parts, I play the full pattern in realtime as a drummer would and then very lightly quantise in Cubase with Match Quantise, which bases the quantise on say a bass line that I would have played in realtime to a click track, thus preserving an actual human feel. I use either a keyboard or drum pads to perform the parts. I think the modern PC versions of Cubase do not have the Match Quantise function for some reason; perhaps Steinberg learned from user feedback that nobody used it much?

From the screenshot in the second link, it's certainly the same program, but no note on a version for the Falcon.

I did note in the article that these were hard to find, just hoped it wouldn't be as hard as this though :(

I tend to build the pattern in Cubase's drum editor page, unless it's using the sampler then it's all in key editor as I can then see the timing as I'm working.
